After you defeat her equip any other weapon instead of the Infinity Blade. Sell off the Infinity Blade and leave the inventory menu. If you move on to view the cut scene, right before Siris the main character puts the Infinity Blade in the rock open up your inventory and you should see that you once more have the Infinity Blade. There should be another cut scene after this cutscene finishes. When that cut scene first begins open up your options and navigate to restart rebirth 1.

Although they outclass dual weapons and light weapons in terms of blunt damage, they are the least ideal for self preservation as they disable dodging and require the player to block in the direction of the incoming attack.
In addition the heavy weapon's slow attack speed means that the player is punished severely upon missing a parry. Unlike other weapons, heavy weapon class starts it's combo at two hits rather than 3 to compensate for it's slow attack speed. In addition to the weapon changes, some combats offer bonus XP if you can defeat the minion of the God King without using blocking, or if you can parry on three occasions in one combat, or something in that vein. These are all small additions, which are important because they add enough interest and new activity to not make it feel like you are just wandering through a set path killing one humanoid after another.
This time the narrative also gives us a greater sense of the Infinity Blade world than the original. It is slightly hazy and seems to introduce a range of plot ideas that don't fully make sense, but it is an obvious continuation as you start with the Infinity Blade and all your previous equipment from the original game. Without giving away any spoilers, you have a sense that you are destined for something greater, but are not sure what that is.
There are a few more options and paths on offer that take you to new parts of the castle, but you have to locate different keys to access them.
